Bread-making is a mystery to most, and for many an enigma. It need not be! Learn from one who threw a few batches out to the chickens before finally getting it right.
We will explore the benefits of fermented grains, why “organic” matters, how to make and maintain your own starters (hint: you have choices!), and then how to work up a wide variety of breads utilizing several key principles. You will learn how to make everything from focaccia to cinnamon rolls and herb breads, with many ideas in between.
We also cover learning how to make a poolish, which is an easy alternative to keeping a traditional sourdough starter alive.
Class notes will be available to class participants. So put on your baker’s hat and apron, grab a bowl and spoon, and bake with us!
